Cottage Cheese and Egg Baked in a Tortilla
Beyond the cottage cheese and eggs you can add all sorts of things into your tortilla bake. We have a few suggestions below like fresh spinach chopped and chives but beyond that there are lots of choices. A few popular ones we have used also in the past have been olive slices, quartered cherry tomatoes and bacon bits.
A great savory quiche like breakfast with a thin crust, they are so inexpensive to make that you can bake a few when guests come over for the holidays. During Thanksgiving afternoons I will make a couple of these with our Breakfast Bread Pudding to pair the savory with the sweet.

There are three sizes you could make this in. Below features large burrito size tortillas in a silicone pan but you could use a glass oven-safe 7 inch pie pan too. Smaller bites would include cutting these into smaller 4 inch sizes to push inside muffin tin holes, we will feature that below.
In the middle this would make a great Ramekin Breakfast Recipe too. I would cut circles so they are 1 inch larger than the diameter of the dish you are using so when you press it in it will still cover the sides just like a crust.
Breakfast Tortilla Quiche Ingredients
- 1 burrito size flour tortilla, the largest size
- 4 medium eggs or 8 tbsp of egg whites
- Cheddar cheese is what we used, shredded
- Cottage cheese is best “regular” and can be found lactose free
- Salt and pepper
- I like adding spinach fresh leaves chopped
- Optional
- Green onions diced are optional
- Olive slices
- Quartered cherry tomatoes
- Diced red onion or bell peppers
Your baking dish would need to be a 7″ round. A pie pan would work if you’d like. If baking in an air fryer you would likely need to use the regular size tortillas in a 4 inch size dish so it would fit and split the filling in half.
How to Bake a Quiche in a Tortilla
- Preheat the oven to 380 F. Use a silicone 7 inch oven proof dish or silicone pie pan.
- Push large tortilla in the bottom, covering up the sides of the dish too to contain filling.
- In a bowl, combine all ingredients, but only add half of the cheese into the filling.
- You can also save some of the green onions for serving too.
- Mix everything thoroughly and carefully transfer it to the tortilla, trying not to let the omelet mixture spill over the edges.
- Bake for 20 minutes.
- Remove from the oven and sprinkle the remaining cheese on top.
- Return to the oven for another 5 minutes until melted and golden brown.
- Remove, let it cool a little, then serve with extra green onions and, if desired
Can you bake cottage cheese cups in a muffin tin?
Absolutely you can make egg muffins this way! Just use a 4″ biscuit cutter to cut 3 rounds out of each large tortilla to push 1 into each sprayed muffin tin hole. Pour in egg and cheese mixture to fill 3/4 of the way full. Bake in preheated oven at 350 degrees for 20-23 minutes or until set in the center.
1. Ricotta Cheese has a similar texture and taste, slightly creamier and milder. Great for baking or as a topping.
2. Greek Yogurt is thick, tangy, and high in protein. Works well in smoothies, dips, or even as a topping.
3. Cream Cheese is creamier and richer, but can be a good substitute in dips, spreads, or desserts.
4. Tofu works for a dairy-free option, soft or silken tofu can mimic the texture of cottage cheese, especially in savory dishes.
Yes, there are dairy-free versions or lactose free cottage cheese from Lactaid available at the store too. The latter doesn’t have a different taste as far as we are concerned so we try to find and use that.
What to serve with egg bake
- Tanghulu Strawberries are fun and pretty to decorate the table with.
- Sliced bagels or toast with jellies and different cream cheeses.
- Bacon and sausages will give guests a meat option.
