A ramekin cake is a small cake baked in a small ceramic dish, that is often used for cooking and serving individual portions of food. These desserts can be made in various flavors and are often served with a sauce or whipped cream. (affiliate links present)
Cake in a Ramekin
Ok so there are tons of possibilities when it comes to baking single serving cakes in the oven. You can whip up any boxed cake mix as directed on the back. Once you have your batter when spray dishes, fill to 3/4 of the way full and follow the temperature and bake timing in our recipe card below. Done!!
If you want German chocolate cake it is great when done if you use the back of a spoon to push it in in the middle. Then squeeze some hot fudge in the middle and OMG it will be like a chocolate lava ramekin cake. They are kinda’ like a chocolate mug cake without a microwave needed.
Chocolate Ramekin Cake
For just a basic vanilla cake you can combine the following ingredients and just use that. From there you could use different extracts like coconut or lemon to adjust the flavor to your liking. The following recipe card makes just 2 so it is perfect when the kids are away.
- Unsalted butter
- All purpose flour and sugar
- 1 large egg
- Vanilla extract
- Baking powder
- A pinch of salt
- Milk or dairy free alternative like almond or lactose free milk
- Cooking spray
To alter the flavor you can use extracts or 1 tsp of cocoa powder for that flavor. Top with a spoonful of chocolate chips and/or ice cream and a vanilla or single serving chocolate dessert is born. I mean beyond that the additions when done are many; whipped cream, fresh fruit diced up, caramel sundae topping, nuts, whatever you would put on cake in general.
Single Serving Cake
Baking in ramekins can be a fun and easy way to create individual portions of your favorite baked goods. Here are some tips to keep in mind when baking in these small dishes to get it done well and not bubble over making a giant mess. These are super fun, especially for the kids so get them involved in making these!
- Grease the ramekins to prevent the baked goods from sticking, make sure to grease them well with cooking spray, butter, or oil.
- Adjust the baking time, this may vary depending on the recipe and the size of the dishes you are using. Check the baked goods regularly to avoid over-baking or burning.
- Fill the ramekins properly: Do not fill the to the brim as the baked goods may rise and overflow. Leave some space for the baked goods to expand.
- Use a baking sheet: Placing on a baking sheet will help distribute heat evenly and prevent them from tipping over.
Let the baked goods cool for a few minutes before removing them from the dish to prevent them from breaking or falling apart. If you use a knife to slide it all the way around the edges you could scoop it out entirely once it was cold. I don’t bother because it is better warm and just serve it up as is in the dish.
Ramekin Muffins
If you wanted to make a breakfast using these instead of a muffin tin you totally could. Just remember to always spray the insides well and not to overfill beyond 3/4 of the way full. These will take about the same time as baking jumbo muffins. For our cake below you will;
- Preheat the oven to 350 degrees F and spray two ramekins with cooking spray.
- In a medium sized bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract.
- In a separate bowl, mix together your dry ingredients
- Add the flour mixture to the butter mixture and stir until well combined.
- Stir in the milk until the batter is smooth.
- Divide the batter evenly between the two ramekins.
- Bake the ramekins in the preheated oven for about 20-25 minutes or until a toothpick inserted in the center of the cake comes out clean.
- Remove from the oven, set on a cooling rack and allow them to cool for a few minutes
Then top with frosting, a glaze made from powdered sugar and milk or enjoy as is. A bit like a vanilla mug cake recipe if you have ever had that. If you had a rather large oven safe mug you could use that instead if that is all you have.

- 1/4 c butter unsalted
- 1/4 c sugar
- 1/2 tsp sugar
- 1 egg
- 1/4 tsp vanilla
- 1 tbsp milk

- Preheat the oven to 350 degrees F and spray two ramekins with cooking spray. In a medium sized bowl, cream together the butter and sugar until light and fluffy.
- Beat in the egg and vanilla extract. In a separate bowl, mix together your dry ingredients. Add the flour mixture to the butter mixture and stir until well combined.
- Stir in the milk until the batter is smooth. Divide evenly between the two ramekins. Bake in the preheated oven for about 20-25 minutesor until a toothpick inserted in the center of the cake comes out mostly clean with moist crumbs attached.
- Remove from the oven, set on a cooling rack and allow them to cool for a few minutes. You can drizzle chocolate ganache or frosting over the top and enjoy.

I am stunned and thrilled to report that this randomly selected recipe came out darn-near perfectly. I bake about as often as I fly to the moon, so I assumed they’d explode. Instead, they were delicious. I served them with some stone fruit compote and whipped cream, and they went over so well with the Mrs. that I think I’m on the hook to make them once a week.
