Easy ramekin breakfast recipe here! A great way of how to bake muffins, fruit, quiche or Ramekin Cake in small dishes for an easy individual serving treat.
Did you know you could bake muffins in ramekins? I know you have thought about it before when you ran out of paper liners and spray but wasn’t sure of how long to bake them and whether it would work that well either. We are here to explore the idea and show you how simple it can be (and pretty). (post may contain affiliate links present)
Ramekin Muffins
This is a really fun idea. Whether you don’t have a muffin tin and need an alternative pan to use or want to bake single serving breakfasts or brunch items, ramekins can be the perfect size for anyone. In this post we will go into specifics when it comes to breakfast items but there are lots of other dishes made this way too.
How to Bake Muffins in Ramekins
It really is no different than if you sprayed a muffin pan with non stick spray except that they are separated from one another and there are a variety of sizes to choose from. These are similar to a Costco jumbo blueberry muffin version with a 10 oz. porcelain dish used. A regular / mini muffins size would use a 4 oz. dish.

How do you bake muffins without a muffin tin?
This is it!! You can use a homemade batter, boxed mix using the ingredients listed on the back (we love Krusteauz brand the best), or make our 3 ingredient blueberry muffins idea. I will share how to make the latter one below in the recipe card because it turns out so good. In this case you are going to need;
3 Ingredient Muffin Ingredients
- A box of cake mix, white is best or use the same flavor as the pie filling you choose.
- 1 can of pie filling of your choice (berry, don’t use lemon).
- 2 eggs will make it fluffy and rise just like if you were to use an actual muffin mix prepared.
- allowing them to sit on the counter first to get closer to room temperature is ideal.
- Use a large bowl to mix dry ingredients with the other two to combine.
Use a baking sheet to set them on so they sit flat on the rack. Yes timing will vary depending on what size cups you use. I like the 10 ounce versions linked below because they come out big and beautiful. This size takes 22 minutes, closet to 8 oz. will be closer to 15 minutes or so. Check then and feel free to check every minute after that if not quite done.
Boxed mixes would take the same bake time and temp. as listed below. If you wanted to use fresh blueberries, this is a great homemade berry muffin recipe once again would follow the same directions as shared below as far as the 350 degrees F. oven temperature goes and 22 minutes for us is perfection.
Can you bake muffin mix without milk?
Yes!! We did just that here with 1 box cake mix + 1 can of pie filling (21 oz) and 2 eggs listed below which is dairy free to make the batter. If you are very sensitive you would want to check the ingredients of the dry mix itself though because some may have dry milk inside (unusual but possible) just to be safe.
There are in fact lots of Dessert Recipes for Ramekins you can make in these same dishes. I mean just about anything goes such as making smaller batches of baked apples, small cakes that take much less time to bake than a pan full, brownies, the list goes on and on……
You can save this recipe below to use over and over again. A quick throw together treat where you don’t have to start from scratch with baking powder, flour and all which is why I love it. Need a gluten free muffin mix to fill your dishes?? You can find
Yes! As long as the ones you bought state that they are oven safe (almost all are but it is always best to check) you can bake cakes, brownies, quiches or other recipes in them. I would suggest placing these on a sheet pan so they sit flat on the rack and don’t tilt or fall over.
First look for a sticker that states that it is. If they are made of cast iron then they are. Ceramic and/or Pyrex versions are safe to bake in as well but it is always safest to check for a marking or check in the description of the item(s) you bought.
No, there are some made of cast iron and others made of metal that would work to bake or cook in. I do think that the white non stick porcelain style is best for baking personally but you can find a variety of materials.

Ramekin Breakfast Recipe
Ingredients
- 1 box cake mix white used
- 1 can blueberry pie filling 21 oz.
- 2 eggs
Instructions
- Preheat oven to 350 and lightly spray inside of ramekins with non stick spray, place on top of a flat baking sheet.
- In a bowl stir together cake mix and eggs. Then fold in pie filling as to combine well but not break fruit apart any more than necessary.
- Fill each 10 oz. ramekin 3/4 of the way full with muffin batter. Place baking sheet with dishes on top in the oven and bake for 22 minutes or until toothpick comes out with moist crumbs attached or when touched in the center they spring back.
- Remove from oven and allow to cool for 5 minutes. Use a knife to slide all the way around the edge to loosen it from the dish. Use a spoon to gently scoop it out and enjoy.
